Looking to do a 24 hour roast. Looking for something in the middle of the 185 & 158 degrees posted. Would 168-170 give me that result? Thanks!!

I would personally target 55 °C / 131 °F for 24 hours. It will give you tender, and a bit on the medium-rare side. If you want it a bit more medium, try 58 °C / 136 °F.

ok, here's where you got me completely fumbled. Under your "Short Ribs Time and Temp" page, you've got degrees for 24 hours that are way higher. When looking at the example videos you posted, I was looking for somewhere between videos #2 & #4, so that's how I came up with 170. What am I missing to Johan's point, seems like I'd overcook them? I have three chuck roast ready to go...help

Shortribs are much tougher. Try 55 C for 24h as Chris said.

Thanks!! Been cooking them at 132.5 since last night...I'll post a pic when all said and done
