I plan on cooking my 10 lb (4 Rib) Standing Prime Rib Roast using Joule on Christmas day. I am estimating cooking time to be 7 hours+.
Can I pre-sear the roast the day before (Christmas Eve Day) and then vacuum seal the bag to place in fridge overnight? Will start the cook at 7am Christmas morning.
Any concerns with this plan? Should I skip the pre-sear?
