Plucked from the water by a diver just a few hours ago here in Nova Scotia (Digby Bay Scallops). Also featuring some live shrimp, lobster, crab, cod and haddock. Topping it with an uni garnish plus a lemon dill foam.
Base will be a classic maritime fish stock and cream with shallotts, leeks, guancale instead of salted pork, baby red potatoes, fresh nutmeg and thyme and thicked with xanthum.
