I'm not really sure what you mean. Do you mean using DI water in your sous vide bath? If you want to, go for it. It will extend times between needed cleaning.

Sorry. Meant cooking with it. Like making stocks and using it in place of tap water. Doesn’t Alinea use it? Cleaner product?

I honestly don't know what Alinea does. I'd say go for it. There can't be any bad results. The only flavor will be coming from the ingredients in the stock.

I remembered where I read it. The wonderful relae cookbook. I’m going to dive back into that.
Edit: ah, he talks about using filtered water. I understand that as purified water which is the same as distilled.
