Hey Todd, I assume that the Aerated Beet Root Salad is either a take on the Fat Duck's or something similar and a recipe that I have been wanting to try. Could you point me in the right direction to track it down?

Hi Red,
It was a bit of a guess (but got lucky) and I used a hemispheric mold to shape the dehydrated meringue.
100% flavorful juice
20% neutral sugar
12.5% albumin powder
1% acorbic or citric acid
Combine these ingredients (e.g. blend) and allow to hydrate 4-6hrs plus)
salt to taste
Whip to stiff peaks.
Dehydrate at 200F for a couple of hours
E.G. For the flavorful juice my next consideration for beets would be a bit more traditional beets and either balsamic vinegar or raspberry vinegar.

Hi Red, it was based off of old notes that were less than stellar from MC (I was borrowing a copy at the time). I recall in the book, they cut theirs to shape, but I found that too fragile (or I suck at it :-)). It also inspired me to recreate a beet salad at the time, where I roasted the beets for 7hrs, cut the bottom off, cored them leaving the chewy skin in tact, juiced the cores I had taken out, seasoned with balsamic, made the meringue and piped it into the skin to dehydrate/cook. To make it familiar I tried to bring goats cheese two different ways. One was inject it, which worked, but only in very small quantities (not enough to make an impact IMHO) another was to paint the inside of the shell with it which worked better but still needs improvement. At such a low heat, it didn't melt. I left it there bc well......life got in the way and there were other things I also wanted to work on.
