Normally sauerkraut, pork and potatoes. Started the Kraut a couple months ago and did the pork SV. Cooked the kraut with onions, juniper, caraway, and allspice (and wine :-)..). Combined in donabe with a touch of smoked bacon dashi to cook for another 45 min and served w pommes puree (not shown). Was sent back to the US with some cookies from home......some varieties not my favs but was able to use them as a crumb base for a chocolate Ganache cake served with banana hazelnut gelato.
