Cooking up this beautiful Pork Belly. Need to go to the market to get the rest of my ingredients to plate up some dishes but I couldn’t wait to try it. Amazingly delish !!!!!!

Thank you very much for all your kind words!🙏🏼 Not sure about the microwave oven ? But here are the steps I took to make the Pork Belly. It’s about a 4 day process.
for the pork belly make sure the skin is taken off. Won't get crispy after sous vide.
Make an equal mix of kosher salt and sugar. Completely coat and bury the pork belly in the mix. Wrap in plastic wrap and cure for 12 to 24 hours. Once done, rinse under cool water until salt and sugar is gone. Pat dry and vac seal. Cook at 180f for 12 hours. Once cooked place in ice bath for an hour until completely firm.
Place in fridge and put a sheet pan with heavy weights on top of it. Let stand overnight. Unbag and rub the fat and congealed juices off and save for sauces and searing. Portion into cubes and hold until needed.
To serve get a pan over med heat and add the reserved lard. Place pork belly fatty side down and cook until you see it turn Brown. Place in 350f oven without turning over. Cook for ten minutes or until it gives when squeezed. Flip and baste with herbs etc.
