Hi, my name is Denise and I just got my first sous vide. I want to cook a turkey breast and I've decided to go with 145 degrees for 2.5 hours. If I put it on when I'm home for lunch and won't be home again for about 3.5 hours, will the turkey be okay? Does it just shut off and my turkey will be sitting in cooling water for an hour? Is this okay? I can't wait to try this method of cooking!
