While you will lose more, it might be a better/safer idea to age your meat, then glue it together. Most meat from a reputable source has a low risk of anything pathogenic, any the cleanliness of your work area is also an important factor. However, I don't think there's any way to be 100% certain you're not introducing any bugs to the surface. Not saying pathogens, just potential spoilage organisms.
