I will be making the lemon foam recipe from Chefsteps tomorrow, and am concerned about a step in the gelatin process. In the video they use powdered gelatin, but in the recipe they call for 160 bloom sheet gelatin, which is what I purchased. My question to you all is do you think I need to bloom the gelatin in cold water before dissolving it into a syrup. They do not mention anything about needing to bloom the sheet gelatin, but at the same time it seems they used powdered gelatin in their recipe. Your thoughts would be greatly appreciated!
