I do these shokugekis with one of my coworkers/friends every other week to hone our dish creation skills. Shokugeki means food wars, the name comes from of our favorite anime series Shokugeki No Soma. Last time we did one based on sweet potato as a main ingredient. For my dish I decided to do a sweet and savory, fine-dining, bubur cha cha, which is a soupy Malaysian dessert that usually includes tapioca pearls, various types of sweet potato and yam, and coconut milk. My take on that included a taro and coconut milk custard, seared scallop, savory coconut cream, mango sorbet, cashew coconut crumble, steamed sweet potato cubes, tapioca pearls, sweet potato chips, and mint for garnish. I was pretty happy with the result overall!
