Microwave cake

Playing with Easter ideas as the group that will be served doesn't like lamb or ham..... but does like carrot cake, so playing with an aerated caramelized carrot sponge and playing with carrot gelato......and maybe some creamed cheese....

Carrot Gelato would be interesting. I make a cream cheese ice cream base infused with brown butter carrot cake and rum soaked raisins mixed.in. I am going to crumble over some.more brown butter carrot cake and candied julienned carrot.

The idea came to me as I didn't want to throw out the carrot mixture I used to make the butter and milk for the cake. So, I pureed it with some spiced rum, sugar, but of walnut oil and put it in thepacket. Will see how it turns out tonight..held back some of the spiced caramelized carrot mixture. Dehydrating now and will toss in some LN2 and make a powder for dusting.
