Sounds delicious. I am curious about the Elote Piergi.. is it am elote filling? Corn meal crust or anthing like tjat?

Menu looks great. Hard to make suggestions without knowing which element will carry which texture(s). Aromatics when serving?

Thanks. Here's a couple full descriptions to give you more insight on the new dishes
Pork loin. Chorizo puree. Compressed Asian pear. And Fennel salad. Crispy greens.
Braised Wagyu Shortrib. Bacon onion jam. Giardiniera relish. Fonduta sauce.
Carmelized Banana Semifreddo. Hazelnut Cake. White chocolate crumble. Brulee Banana coins. Lime. Mint

Thanks Chris and looks great! If there is a sauce for the pork, I would lean toward making the chorizo into crisps (e.g. gel w/ kuzu and dehydrate and finish w/ deep fry). That would give the eater a contrast of crispy beyond the greens. If no sauce, I see how the chorizo could seas the pork (though would lean toward making the puree a foam and top it with the crispy greens). For Wagyu, any crunch here? Bt the wagyu and Fonduta, it 'sounds" rich and the Giardiniera acidity will help cut through some of that, so thinking more texture contrast (not sure what though....).
For the desert it looks good, maybe add crystalized dark chocolate w/ the white (I haven't been able to get my white chocolate to the point where the crumble is real crunchy). Please know these are just ideas. Thank you for sharing this looks awesome!!
