SV Ribs for more than 4 hours?

May do the Apartment Ribs this weekend. I was going to put them in the circulator around 10:15am when I leave to go golfing and then when I get back around 3:30, take them out of the bath.

Would that extra hour or so be detrimental? Not sure how pork ribs react to extended times in a water bath.

Not at all. They should be fine.

My friend his giving me the ribs. Just told me that they are those already sauced and in a bag ribs. I may just forgo the SV and cook them in the oven at 225F for 6 hours or whatever.

depends on your preferred texture. I prefer mine with a bit of snap (hence the lower temp preference). So, really up to you. :-)
