How long to cook a pork shoulder

I'm making the ChefSteps Pork Shoulder Steaks. They suggest cooking a 5 pound pork shoulder at 140 degrees for 30 hours. How long would you cook a 10 pound at 140 degrees?

Hey Robert! With such a long cook, there is little need to adjust the recipe. The 5 pound shoulder would be cooked through in 4ish hours. The rest of the time is added to tenderize. Even if the 10 pound shoulder took 8 hours to cook through, there is still lots of time to tenderize. Just to make the timing easy, I would bump the timing to 36 hours. Anything between 28 and 48 hours will give you a good result.
