Can you replace the bananas with any type of fruit? I've never used amylase before and don't know its limitations.

You can replace it with any fruit or vegetable that has a high starch content. Amylase converts starch to sugar, it is even present in your saliva. When using amylase its important to keep in mind it's a enzyme and if you over heat it, it will start to denature. When using alpha and beta amylase together the optimal temperature to hold it at is 65 °C. I would think it would be fun to do a faux pea, I'm excited to see what you come up with.
