Just in case anyone else in the PNW is confused about those razor clams, for some weird reason the razor clams I encountered in Spain (and likely in France?) were totally different than the ones here. A lot smaller, and seemed sweeter, more tender. Commonly had steamed, whereas I always cook local ones here fried or in chowder.
I wished we had Spanish style ones here...they are delicious!

Yes in Europe, generally the razor clams are relatively small compared to the ones you could find in Asia, for example. Just not exactly the same species, I guess. Here the are about 10-12cm long. generally, in restaurants and bars in France or Spain, you eat them just "a la plancha", sauteed with garlic and olive oil... This said, in ceviche, I guess you could try larger ones as long as you clean them carefully and only use the muscle, chop fine and let it cook in lemon...

This is what ours look like...and this is a rather small one! And you have to chase them to catch them; they dig quickly!
