Salmon taco cone

Smoked salmon taco w/ layers of crispy rice and soured gribiche puree. Served in a corn pasta taco cone. Broccoli soup w/ aged goat cheese, walnuts and MANNI Olive Oil. Main, fennel puree w/ mushrooms, crispy onion cream and steak (54C) served on truffle and mushroom puree. for desert, strawberry sorbet and exploding chocolate gateau.

Cones are a nice idea,.. I tried once a chicken salad sort of cone, made form Pizza dough, worked out well. Thinking about a scoop of stiff green asparagus purée in a spiced waffle. Topped with some trout caviar and fresh dill.

Any tips for making your masapasta? I’m thinking a south of the border ravioli..

First, I prefer dough that is a bit wet so I don't need to add any flour when I pass the dough. Does take a bit longer to dry though. I combine 00 and bread flour b/c of the higher gluten content in bread flour (you could also use straight gluten) w/ the masa, but the best addition was the toasted corn stock (instead of water) and a small amount of egg. I made chilli ravioli with my first test which was really nice, but the pasta was better with the combo mentioned above.
