Wagyu beef fat

Hello guys, I got myself a jar of Wagyu beef fat and I tried few things, I got the best result by pan frying some scallops, has anyone got any experience with it or any advice on how to use it at the best ?

oh man, make beef fat bernaise. just add rendered beef fat to a bernaise mixture whilst emulsifying
