Swordfish Confit?

I love the sous vide tuna confit recipe, but I struggle to find albacore. Anyone experimented with other types of fish? Any recommendations? Thanks!

Hi Aaron,
I cannot answer your question precisely, but I would say that it should work with any "solid" or fat fish. I would say salmon should come OK. Bacalau (salted cod) should work fantastic too. I would also be curious to make that recipe with herring or even sardines. Basically the other fishes that you find in cans.
I woudl personnaly try herring or salted cod first...

Capers with the salted cod, and chili. For the herring, yes lemon, confit only if it is still a bit sour, or any other pickled vegetable would work I guess. And some toasted bread, or salted breadcrumbs, or somehting like this... Have fun!
