Looks amazing.. is the beet lollipop from the Alinea cookbook?

Not familiar with their beet lolipop? Recall they have a sphere, gel sheets, folded shells etc etc. They have a hibiscus lolipop, though not the same as this.This was pretty simple. Used creme fraiche combined w/ horseradish, frozen to a lolipop stick. Roasted beets and juiced, combined w/ balsamic and olive oil. Gel coating was done using Gellan and kappa and then sprinkled using the candied walnuts.
