It's been forever since ChefSteps released a new Premium course. If you had your say, what new course would you like to see them make?
Speaking for myself, I would love to see is a course on yakitori. There is precious little information available on the subject in English, and I can only learn so much from the photos in Japanese books I can't read. There are some okay butchery videos on YouTube, but nothing I've found is sufficiently detailed for my liking. And nothing goes all the way from bird to skewer. There's a definite art to skewering -- and to portioning chicken for skewering -- that hasn't been explored in detail. My skewers appear clumsy next to those of a master.
This video from Eater is one of the best overall introductions to the cuisine that I've found. Chef Kono's skewers are a thing of beauty.
