Canning with Sousvide

Hi Everyone,

I'm a newbie and looking for ways to can Mangoes via sousvide. Is that even possible? I'm not aiming for pickles though, just sliced mangoes that I can eat in the winters.

Alternatively I could use a home utensil for bringing the cans to simmer or boil. I don't have a standard canning pot or system .

You will need special equipment to safely can products. Sous vide will not be able to create the conditions you need. Neither will simmering in a pot. You will need a pressure canner. If you choose to do it without this, you are creating potentially dangerous conditions for anyone who eats them.

Can I use my regular pressure cooker for canning then ?

I'm gong to recommend you don't. A pressure cooker and a pressure canner are two slightly different animals. The canner can handle a higher pressure and often has a pressure gauge so you can see when you reached or exceeded the necessary pressure. A pressure cooker often will just get up to twice atmospheric.
