I'm a Bostonian born and bred, but now living in Attleboro, MA for MANY years. I love to cook and bought my Joule as a birthday/Christmas present for myself, while it as on sale.
I just used my Joule tonight for the first time. I wanted to test the claim of tougher meats coming out very tender, so I bought an eye of the round roast. I couldn’t find a recipe, though. So, I looked at other sites with less powerful Sous Vide. So, I don’t trust their settings. I read a recipe in a magazine which said 123 degrees for 24 hours to get it rare to medium rare. Has anyone used their Joule for eye of the round? Mine is 2.5 lbs. Thanks!
