Hi Peter,
I did peeled garlic cloves in olive oil in mason jars without a problem. 90°C 3h. They get confied. I however must say that I did not preserve them long, as I ate them very fast... too good ;-)

USE CAUTION! This will destroy botulinum toxin (if present)...BUT will not destroy any spores that might be present. Garlic prepared this way can be refrigerated and used within a few days. It is NOT a preservation technique and should not be kept at room temperature.

yes, why not. I just bought new vacuum sealer for sous vide and I'm going to make olive oil preserves this weekend. I read reviews about best vacuum sealers here
