Im a BIG fan of ponzu or fish sauce based sauces with cod. I always add shaved green onions to it as well for texture and flavor.

Growing up in Sweden clarified butter on things like cod was a very common thing. Add a squeeze of lemon before serving.

Cod has a flaky flesh, but still has a somewhat meaty texture. Consequently, it can really take on sauces (and cooking techniques, fwiw) that are built on heartier flavors and still stand out. Mushrooms, tomatoes, truffles, even.... it's a really versatile fish.
