Can turkey legs be cooked at 131F for 12 hrs? I'm currently making chefsteps' turkey recipe. I finished up cooking the legs at 150F for 12 hrs and dropped down the temp to 131F to put in the breasts when I realized I mixed up my turkey parts and actually put one breast and one leg in during the 151F cooking temp so now I'm stuck with cooking the remainder leg and breast at 131F.
Is it safe to cook the leg at 131F for 12 hours so I can finish up cooking the breast at the correct temp? Should I then bump up the temp to 167F and cook the leg by itself for around 3 hours to ensure it's cooked?
Any suggestions? Thanks!
