I want to make the best turkey ever!!!!!

Juicy, tender, fall of the bone.

I want to make it in the oven or in a fire in the backyard like a rotisserie or roasted lechón.

Any suggestion?

The way that Chefsteps does their roasted chicken is a good guideline. I did mine that way, outside of the brining, and it was pretty much perfect.

That's what I'm planning to do, although I may do it in a smoker rather than the combi oven.

I saw a Serious Eats recipe (via the PolyScience Facebook page) for a SV turkey breast porchetta style. Think that's where I'm headed this year, since it's just going to be the wife and me for a change.
