Pork shoulder (butt) advice

Hi my name is Allan,
I have just completed a 24 hour cook of a pork shoulder and want to know if I can put it right in the refrigerator for tomorrow? Also, how do you recommend reheating it at that time?

It'll need to chill down in an ice bath before storing in the fridge. Otherwise, it will be much too hot to cool down in a reasonable amount of time and will warm up your fridge as well. As for how to reheat, it depends on how you're planning on serving it. If you're going to do it whole, it'll take many hours to retherm in a water bath. Depending on the temp at which you originally cooked it, you can slice the chilled pork shoulder into steaks and then retherm them much more quickly. That's the strategy in
