Make fluid gel "un-clear"

Hi all.

I am thinking about making a strawberry fluid gel (after clearing it with pectinase) , I would like to make half of the fluid gel non-transparent and make it look like ketchup. Any advice for what I can add to the fluid gel to make it look like ketchup?

Why not just clarify half the juice? Or clarify it all and mix in some thoroughly blended strawberries to make it opaque?
