I want to Sous vide a prime rib and potatoes for the same meal. How do I do this since they require different temperatures? How do I time this?

It depends a bit on how you are going to prepare your potatoes. Let's say mashed, for example. Cook your potatoes first because they will need a higher temperature. Remove and change temperature for your rib (you can cool your cooking vessel by removing some water and adding cold), or just start with fresh water. When bath is ready add your rib. Mash your potatoes. Place in a container or bag and chill. You will return them to the water bath for the last 30 to 40 minutes of your rib cook so that they reheat. By the way, a water bath is the best way to reheat mashed potatoes. If mashed is the wrong example, let us know how you are doing your potatoes.
