Those look fantastic! What's the sauce? I am going to pick up some beef tounge this weekend and may e some pork belly and do some.long sous vide cooks for taco spread.on Christmas eve... have to try making.homemade.tortillas.

Thank you very much, The sauce is a sriracha mayo to put some heat into the taco. Love pork belly. Need to go buy some as well want to do a double cooking tech. of cold smoking it first on the traeger and then SV cooking it. Hoping to lock in some good flavors that way. I bet you will have some awesome tacos.
