72hr Osso bucco w/ Parisian gnocchi and bone marrow custard (made w bone marrow, fermented mushroom jus and veal stock). Sauce was marinara w/ 898 pureed squash, bone marrow and herbs. Topped w/ a pinch of 898 butternut squash skin crumble.
