Hi everyone. I got my wife the Joule for Christmas, and we will be cooking with it for the first time tonight. We are cooking steaks, 2 inch thick Filey Mignon.
I have 2 questions;
1. When looking at the Joule app, selecting 'Beef', then 'Basic Steak', I can then select my temperature. I will have 5 steaks cooked Medium-Rare, and one cooked Medium. So-I then select the temp in the app, 129 for Med Rare, and then select 'Fresh' and the thickness, 2 inches. The app suggests 2 hours cook time. I did all of the above for the medium steak, changing only the temp to 133 for Medium, and it again tells me 2 hours. I started messing around with the selections (temperature and thickness), and each time it suggests 2 hours when 2 inches is the thickness. My question is "is this correct"? Will the cook time be 2 hours, no matter what temp, for a 2 inch steak?
2. Since I need steaks cooked at Med Rare and Medium, I want to make sure I understand what seems to be the most suggested method;
1. Cook the Medium steak first (133 at 2 hours, per the Joule app).
2. Leave the steak in the water, bring the temp down to 129, then add the Med Rare steaks, and cook for 2 hours. So-4 hours total, and the Medium steak will have stayed warmed, but not at all overdone, and the Medium steak will be at 129. I then remove all steaks, sear and serve.
Questions; 1. Am I correct with the method above? 2. Do I still need to let all of the steaks 'rest' for 10-15 minutes after the sear?
