The old saying I remember from an episode of Good Eats... “a pint ‘s pound the world ‘round”. That was in the context of water but I’m sure it’s a good approximation.

16 ounces... That is 16 fluid ounces or approx 475 ml so call in half a litre or 2 cups (which is a pint).

A pound of stock (or anything) is 453.592 grams. Anything can be measured by weight/mass, which is what mist of the ChefSteps recipes go with. Just get a scale and add stock until you get to the desired amount.
