Had a bunch of friends for dinner, one of them didn't eat meat so I had to cook a veggie centric dinner, with some seafood. It was fun and turned out ok, I think. it's not super recent, but I was busy and couldn't post and then a couple of weeks ago I tried, but I couldn't upload anything on the forum.
1 - Beet tartar.
Roasted beet, chopped, folded in some beet puree for creaminess and served with all the traditional beef tartar condiments. Cornichons, capers, shallots etc... Topped with grated salt cured egg yolk. The whole thing served on a seasoned beet leaf with a dollop of the same beet puree.
2 - Lobster.
Quickly blanched lobster, then pan roasted in Lobster oil. served cold as a salad with mandarin, grapefruit and finger lime, a salad of pickled fennel and pickled persimmon. (Pickle was a traditional 3-2-1 pickle using a mix of pear vinegar and cider vinegar)
At the bottom of the plate, a puree of lettuce and spinach. The dish is finished with an oil made from the shell of the lobster.
3 - Carrot.
A carrot roasted in carrot juice, butter and cumin, low and slow until the liquid reduces to nothing. Pickled carrots, white, purple and orange. Salad of carrot top leaves. As a base, caramelized carrot puree. (Took the technique from MC caramelized carrot soup) homemade grain mustard and hickory smoked creme fraîche. Sounds like a lot, but was quite balanced, most of the tastes are carrots with some accents.
4 - Pasta.
Handmade tagliatelle (
@ansonmills pasta flour, my favourite, not a sponsor, just love their flour). Miso, uni (sea urchin) butter. Yuzu marinated salmon roe and crushed roasted nori.
5 - Apple.
Apple tart fine (thin puff pastry rolled out with icing sugar instead of flour) oven roasted apple slices (braeburn apples) apple/ pear/ yuzu compote. Puff pastry crumb and homemade Granny smith apple sorbet.
