Freezing Cream of Walnut Soup
robert.c.brown15
Hello All,
I posted this over in eGullet but no luck so far with an answer. I tend to get quick answers here so I thought I'd give it a go.
I am thinking about making Thomas Keller's Cream of Walnut Soup for my family's Thanksgiving, but unfortunately I'd have to make it days in advance (about 5).
How well do you think it would freeze? Would it negatively impact it when it comes to taste? I would thaw it the night before and reheat it in a saucepan, whisking before serving.
I've made it before and stored some in the refrigerator for a few days and then ate the rest. That was fine, but I had no idea about freezing it since it is a cream based sauce, etc.
Thanks for the help!

It should freeze fine. You may need to give it a quick blend after thawing.
