Ingredients
- 6 tablespoons olive oil
- 1 onion chopped
- 3 garlic cloves minced
- 1 can (14oz) of whole or crushed tomatoes with the juice
- 8 oz of clam juice
- 1/2 cup of dry white wine
- 1 pound of fresh salmon cut into 1 inch cubes
- spices like dried oregano and thyme
- salt and pepper to taste
- fresh chopped parsley to garnish
Steps
- Step 1Heat oil in a pot. Add onions and saute for 4 minutes, add garlic and cook for another minute. Add canned tomato and cook for another 10 minutes
- Step 2
- Add clam juice, wine and fish and seasonings. Simmer until the fish is cooked through for about 5 minutes.
- Step 3
Garnish with parsley and serve
