Margarita Mix Infusion

I've use my joule for infusing tequila with jalapeño, but I'd like to infuse the margarita mix instead. I use Scales low carb mix and would like to know if using the Joule is the best way or my VacMaster would be better since there's no heat involved. Never infused anything in my VacMaster, so any and all advice is appreciated.

You probably know that alcohol evaporates at about 173F (78 C), so you will want to stay well below that if using sous vide. Both techniques work well. If I had a VacMaster I would use that approach. Its probably faster, and you don't risk introducing heat. ...but I don't understand infusing tequila with margarita mix. That just sounds like a margarita. Besides, most margarita mix is terrible. Tequila + lime + orange liquor (in equal parts) + heavy pinch of salt = margarita.

Thanks for the response Frank! I'm not infusing tequila with margarita mix. I'm going to infuse the margarita mix with jalapeño. My son in law works at a restaurant that serves margs, and I want to take my low carb mix in for him to use when he's making my drinks. It's a pretty good mix, I just love jalapeño. I can't take infused tequila into the restaurant, but the owner said my mix is fine to bring in.

If you used a vacmaster, how would you do it? Never tried infusions with the chamber vac.

That makes more sense! You are going to have to experiment a bit, as jalapeno are quite variable in their heat. I would slice up a bunch of jalapeno and bag with the mix. Pull a vacuum....leave for a bit...then release the vacuum suddenly to pull the flavor from the pepper into the liquid. While Dave Arnold is using different tools, and going for a slightly different result, you might find some info here that will be helpful. Perhaps better....see this link.
