Depending on how long it's been in contact with the water, you'll taste it. Unfortunately. And the tap water can have an influence on the texture too.

It's happened once of twice but if I am doing anything expensive, like Prime Rib, I will double bag it (if using ziplock, or double seal the ends when using vaccine sealed bags.

Ditto. For expensive cuts and/or long soaks, I double bag it.
