We were on the field for work in North Canada in June... Finaly some pictures of our island food... That includes walleye and wild river salmon, and various "local grens" such as pine shoots, firn shoots, blueberry leaves, and catstail (Typha)

YUM!!! Interesting that you [appropriately] call them 'fern shoots'
In Maine, they are known as
Fiddleheads
. I recall Martha Stewart also called them by that name. Found mostly along river banks and only in spring.
Do you saute them in butter? If you cook them differently, mind sharing?

Well, Martha Stewart, no comment ;-)...
I am a scientist, so I use the appropriate (ie scientific) term, I guess ;-)
I did them in a bit of olive oil and salt, as this is what I had with me.
