I have been looking forward to this, since reading Grant’s email last night. My technique needs improvement, but was a fun experiement. And as promised, it was fluffy! I used Jarlsberg cheese, which I should have brought to room temp or grated instead of slicing thinly just out of the fridge. Otherwise quite happy :-)
