Prime Rib Aged in Beef Fat

I had my butcher start aging this prime rib and another for me in mid-July. I took delivery of the first for my birthday dinner at the end of August and this one he'll keep aging until Christmas. So excited. The only downside is he drenched the bones which I prefer to do myself but I really can't complain... He is excited as I am to be doing this.

Nice..., had a 2kg Roast beef aged in clarified butter for 35 days, was just delicious. Nice thing comes with it, aging in Tallow or butter, there are no losses by necessary cutting of the surface compared to air dried/ aged beef.

Basically, it’s a preservation method used centuries ago and is now rediscovered.
