I had my butcher do it for me. I also have one aging in Beef Tallow. I keep meaning to do my own at home - one of these days

Nice! I had success using an old fridge, some temp control and a USB fan for circulation. Worked well.

I dry age at home in the spare fridge all the time. I use the Prime Ribeye, no bone, from Costco. A large baking sheet with the sturdy rack that came with the microwave, but that I never use in it, serves to keep it raised and allow good air circulation. A loose tent of foil protects it from things on the upper shelves. I usually do 3 weeks. Then sliced and vacu-sealed and frozen until needed. It produces pretty spectacular results.
