Using Duck Fat

So I recently bought a whole bunch of D'Artagnan duck fat. Besides Duck Confit and frying potatoes in it, what can I do? I have never had or used it before.
Can I use it in place of oil to pan roast or sear a steak? Can I put some of it in a sous vide bag with steak and thyme? Can I use it instead of butter when basting a steak with thyme and garlic?
I'm having steak tonight for dinner if you can't tell.

I think you can do all of those things you mentioned. There is a recipe I love from Daniel Humm where he slow roasts whole carrots in an inch of duck fat, turning them occasionally.

- try subbing it for the butter in a Bearnaise sauce. It's also really good to use for french fries ...

It's really good in forcemeats, like sausages. I like it for glazing vegetables too.

I enjoyed the
simplified version
of the MC Jus Gras recipe, and used duck fat for that.

Usually have an 8-oz tub of it in the fridge. It's an incredible medium in which to fry chicken. I also like using it to cook eggs.
