Recipe idea for CS: sous vide baby food

Not that I personally care about baby food recipes, but there was just a question posted about this on r/sousvide and I was thinking that maybe the CS chefs should do something on the subject.

I bet it would go viral and drive a lot of new customers to the site and to Joule, particularly if it was a free article. And I'm sure there must be one or two CS employees with babies in the house too.

As usual, good topic.

I'm not saying it can't be done, I'm just saying I would not have been comfortable doing it with my son when he was an infant. While cooking food this way does kill off most harmful bacteria, there is the potential for some bacteria that may not pose much of a threat to adults, but would to someone with a compromised or under developed immune system to survive. Kinda the same reason we don't feed honey to an infant. I'm not one of these knuckleheads who wants my kid to live in a sterile environment: i'll pick food off the floor that he's thrown down, and pick it up, but he's 2, and has had all his shots, and his intestinal flora has had time to develop.

Again, I'm not saying it can't be done, or even shouldn't be done, I would just need a whole lot of scientific documentation indicating there was no reasonable doubt of food safety before doing so.

The science is well documented. There is no reason you can't pasteurize ingredients using sous vide. It's done all the time. You might obviously avoid the salmon mi-cuit, and ultra low temp preparations, but there are plenty of recipes for, say baby food carrots online.

Hmm that is an interesting idea. Wonder what the benefit of sousviding JRs mushy peas or carrots is over using the pressure cooker.
I also think teaching practical science via sousvide for kids could be cool.

I guess it would also matter how long it is intended to be stored for, and at what temperature. Obviously, grocery store baby food is canned in the traditional sense to allow long-term room temperature storage. If you were only making enough for a week or two, and intended to store it in the fridge, a different standard would apply.

Although personally, I would prioritize CS doing a pike quenelle in lobster sauce recipe over baby food. :-)

Frankly speaking, I don't freeze baby food because of the low temperatures most of the benefits of many foods and trace elements are lost. For the same reason, I wouldn't cook in sous vide. Indeed, I know that is possible to cook with the help of this, but anyway, I'm afraid of different artificial products that can harm food and baby organism. Really, you don't know the truth about its origin and composition.
