11.5 alkaline water for Pretzels?

So if a lye water solution is a ph 14

Baking soda in boiled water is a ph of 9

Baked baking soda In water is a ph of 11

Does this mean in theory I can take water from those electric kangen water Ionizer machines

set to a ph of 11.5

And get the same results as the baked baking soda solution?

Has the forum become a ghost town? Everyone mining bitcoin to get a breville control freak?

I got an answer back from the wonderful people at Modernist Pantry, they said the the results won’t be the same as with lye it will be on par with the baked baking soda. My dad started feeding a sourdough starter he said with the discard I can make some pretzels I’ll post pictures of with the 11.5 water and without 🤞

Nice. I don't know about ionizer machines, but the results of using food grade lye (be careful) are better than baked soda. I've made that comparison.

...and it's been pretty quiet around here for years.
