Well I read on this site that gelatin can make a irreversible fluid gel so I tried it but thought other hydrocolloids worked better for that- but what a base for iSi foams! At about .25% of volume gelatin makes an outstanding base for a foam that is light and almost drinkable. Outstanding! For more structure add more gelatin.
