I use glycerin flakes quite often to solidify oils so I can whip them or make oil foams using a siphon, or even helping with some emulsions, assuming because they are polar to some extent? I know that the flakes are made of mono and di glycerides. But what is actually happening are they turning oils into saturated fats when melted into them? How do they change the structure and allow those oils to become solid or to foam up, or emulsify? I've searched some sources on it but still don't have a completely clear idea what's happening at the molecular level.
