If I remember correctly, the ap has a basic steak "recipe" and one for "ultimate" steak. In the end, the time and temps are essentially the same.

You'r right FrankM, but the NewYork Cut is another piece of meat then the regular steak - anyhow - I tried the ultimate steak recipe and it worked like a charm. Actually taste and bite where at least equal if not better compared to an average steak - but still, the mentioned "NewYork Steak" recipe in the vid does not exist anymore.

The question is: Why it was removed - or was it?

The steak they picture in the "basic steak" recipe and visual doneness guide is a NY Strip. The recipe states that you can use ribeye, strip, filet, or t-bone steaks using the same times/temps.

Thats a screenshot from basic steak - Also in the visual doneness I can't see the pict, at least not in my JOULE app Version
